Simultaneously Verifying the Original Region of Green and Roasted Coffee Beans by Stable Isotopes and Elements Combined with Random Forest

Simultaneously verifying the original region of green and roasted coffee beans is very important for protecting legal interests stakeholder according to chemical analyzing method. 131 bean samples are collected from six different regions pretreated with three degrees (green, middle, dark roasted); five stable isotope ratios (δ13C, δ14N, δ18O, δ2H, δ32S) twelve elemental contents (Al, Cr, Ni, Zn, Ba, Cu, Na, Mn, Fe, Ca, K, Mg) green, (131×3) were analyzed. Fractionation isotopes variation evaluated, only hydrogen (2H) significantly fractionated, concentrations increased a certain rate during roasting process. One-way analysis variance (ANOVA) was used compare all regions. Random forest (RF) employed build discriminating model simultaneously samples; this provided 100% accuracy.
